This qualifies as one of the Best Sandwiches Ever! Well, at least according to my sister. Fancy up your grilled cheese with a Texas theme. It is worth the extra work!

Best Ever Poblano-Avocado Grilled Cheese
2 slices Thick hearty bread of your choice
1 large poblano
1/2 ripe avocado
1-2 tsp of chopped cilantro
2 crisp pieces of black pepper bacon
1 slice of smoked cheddar
1 slice of habanero or pepper jack
Mayo
Ranch
2 tsp of feta
Dash of Smoke paprika
Sea salt
Turn oven on broil or 500. Cut the stem off of the poblano; remove veins and seeds. Cut in half. Place on a cookie sheet and broil until blackened (about 5 min).
Brush bread with mayo on the outside and ranch on the inside. Place a slide of the cheese on each bread and toast on a skillet open-faced (cheese side up) on medium low heat.
Meanwhile remove half of the avocado and sprinkle with sea salt and smoke paprika. Add one half of poblano to one of the slices of bread. Sprinkle feta on the poblano. Place bacon on the other slice. When cheese is close to melted, add avocado and cilantro and stack together. Be prepared for awesomeness! It is worth the wait.
