Gluten-Free Honey Waffles

Healthy, hearty, and packed with protein, these waffles will keep you full for hours. Sweetened with honey, vanilla, and cinnamon, they taste like an oatmeal cookie. They are also dairy-Free. I like to make them small like a cookie, so I can run out the door with one in my hand. Kid tested on the pickiest eaters!

GF Honey Waffles

3/4 cup almond flour

1/4 cup stone-ground cornmeal (GF)

1 cup of old fashioned oatmeal 

1/2 tsp baking powder

1/2 cup GF flour mix or brown rice flour

1/4 cup Grapeseed oil

1/2 cup of egg whites or 2 eggs

1/4 cup honey plus 2 Tbsp

1 tsp lemon juice

1/2 cup almond milk

1 tsp vanilla

1/2 tsp of Cinnamon

– Mix together wet ingredients. Sift together dry ingredients in a separate bowl. Stir together. Brush waffle maker with coconut oil. Add 1/4 cup of batter to each waffle square. Cooke for 1 minute until golden. Serve with maple syrup or your favorite topping. These also freeze well.

Gluten-Free Banana Bread

This is simple, buttery, sweet, delicate, and moist. You won’t miss the gluten and you will be going back for more.

Gluten-Free Banana Bread 

1 stick of melted butter (substitute coconut oil or earth balance for dairy free option) 

1 cup sugar

1 tsp Salt

2 eggs

1 tsp vanilla

1 tsp of baking powder 

1 tsp of baking soda

3 ripe bananas mashed

1 1/3 cup of brown rice or oat flour

1/4 cup coconut flour or almond meal 

1/4 cup tapioca flour or cornstarch

2 tsp of guar gum or xanthum

****to simplify, substitute  the 3 different flours with a GF flour mix. Also this cooks up great with regular in bleached flour as well. Just reduce flour to 1 1/2 cups. 

-Mash bananas in a large bowl and then add wet ingredients. Whisk together dry ingredients separately and then stir into wet ingredients. Butter an 8 or 9 inch round bake pan. Spread batter into pan, and sprinkle with sugar before baking. 

Bake at 350 in a 8 or 9 inch round cake pan for 15-20 minutes

Lady Cake

I’m Taking a twist between a Tiramisu and a Tres Leches to make the perfect marriage of classy, decadent, and unique. It’s perfect for a special Lady in your Life.

Lady Cake

1 box of organic vanilla cake mix

(Ingredients for the cake mix) plus 1 tsp vanilla. 

-Make cake as directed on the box in a 13×9. Once you remove it from the oven, use a wooden spoon handle to poke holes in the cake.

Middle layer

8 0z mascarpone 

3 tbsp strong coffee

2/3 cup brown sugar

1 heaping tsp of cinnamon

3 tbsp whipping cream plus 2 Tbsp separated

1 1/2 tbsp Kahlua

-Mix all of the above ingredients together, minus the 2 Tbsp whipping cream. Mix thoroughly. Spread over the top of the cake. Then sprinkle the extra whipping over the top.

Whipped Cream Icing

2 1/3 cup whipping cream 

1/3 cup powder sugar

2 tsp vanilla

Cold bowl

-Whip the cream in a cold bowl until peaks begin to form. Add in powder sugar a few spoons at a time, and vanilla until cream forms stiff peaks. Once cake is cooled, spread over the cake. 

Garnish the cake with cinnamon and shortbread cookies.

Old-Fashioned Cherry Cobbler with a Cinnamon Brown Sugar Crust

This homemade cherry filling will stand alone. It’s tart, sweet, and rich with a couple of secret ingredients. Top it on ice-cream, use it as jam, spread into a pie crust, or lattice it with this cinnamon, brown, sugar crust.  Either way… Eat it!

Old Fashioned Cherry Cobbler

2 bags of frozen cherries

1 1/2 cup sugar

2-3 tbsp cornstarch

1 tsp almond extract

1 tsp vanilla

1/4 cup red wine

1/2 tsp cinnamon

Juice of half a lemon

1/4 cup dried cherries 

–Mix all ingredients together in a large pot except for the extracts. Bring to a low boil for 10 min until it sticks to a spoon. Add extracts and stir. 

Cinnamon Brown Sugar Crust

2 sticks of salted butter diced 

2/3 cup brown sugar

2 tsp vanilla

1 tsp cinnamon

1/3 cup half n half

1/3 cup water plus 2 Tbsp

2 tsp salt

-Mix dry ingredients together. Cut butter into dry ingredients until crumbly. Add wet ingredients. Roll out onto a floured surface. Pour Cherry filling into a 9×9 buttered pan. Top filling with the crust. You can lattice the crust, cut stars, or cover completely.

Brush crust with milk. Sprinkle with brown sugar and dot with butter. Bake on 375 for 20-30 minutes until golden. Allow to set for 5 minutes. Serve withice-cream  or cream.

Candy Cake Bar Bars with a Chocolate Ganache

Be fancy…be decadent…be rich…be gooey…be fast! Get you some triple layer dark Chocolate Candy Cake Bar Bar.

Candy Cake Bar Bars

1 box of dark chocolate cake mix

1 stick of melted butter

1/3 cup evaporated milk

1 tsp vanilla

-mix together and pat onto a 13×9 buttered pan. Bake on 350 for 12-15 min.

Coconut layer

2 cups of sweetened coconut

1/4 cup evaporated milk

1 tsp almond extract

1/2 cup of marshmallow whip

1/2 cup finely chopped almonds

-Sprinkle 1/4 cup of the dark chocolate chips on the bars. Mix together thoroughly and pat onto the bars.

Chocolate Ganache

2 1/4 cups of dark choc chips

1/3 cup evap milk

1 tsp vanilla

-Mix milk and chocolate and microwave in 30 sec intervals until melted. Stir in Vanilla. Spread on too of coconut. Allow to set before cutting.

Optional toppings:

Top with crushed toffee bits

Or your favorite candy bar crushed

Smoke’n Corn Chowder

Put a gourmet meal on the table in 15 minutes. It’s creamy, smoky, and cheesy. What’s not to love? Here is an upgrade to an old classic.


Smoke’n Corn Chowder

1/2 onion diced

1 celery stalk diced

1 small potato cooked & chopped ( you can always microwave potato for 1 minute to give it a head start) 

2 cans of corn

1/2 cup chicken stock

1 cup cream or half n half

1/2 cup Parmesan

3 cups cheddar

Hot sauce to taste

1/2 cup bacon

1/2 tsp red pepper

1 tsp Chili powder

1 tsp Garlic salt

1 tsp Smoke paprika 

Smoked sea Salt & pepper to taste

Jalapeños sliced

Sauté onions, celery, and potato in Olive oil & butter until browned.

Add the 2 cans of corn drained and chicken broth. Purée. Add seasonings and cheese. Simmer on low for 2 minutes stirring. Add half n half or cream. Stir. Add in bacon. 

Serve garnished with more cheese, bacon & sliced jalapeños.

Sweet & Saucy Sloppy Joes

These are kid tested and approved as “finger-lickin, bring-me-seconds good!”  One secret spice will make these over-the-top and unique.

Sweet & Saucy Sloppy Joes

1 small onion or 1/2 minced

2 cloves of garlic smashed & minced

Olive oil, butter 

Salt & pepper

1lb of ground beef & 1lb  ground pork

8 oz tom sauce or 24 oz crushed tomatoes for extra saucy

1 heaping tomato paste 

1 tbsp of Worcester or soy sauce

1 tsp smoke paprika & oregano

1/4 tsp cloves

1 tsp salt & pepper

1/2 cup brown sugar

-cook onions and garlic in the butter and oil over medium heat until onions start to turn color. Add meat and cook until brown. Drain off excess oil but  2 tbsp 

-stir in tomato paste and remaining ingredients. Simmer on low for 3-5 minutes. 

Kim’s Tip: toast the buns and they will be less likely to break or get soggy when topped with sloppy Joes. 

To kick it up: sprinkle with cheese and garnish with butter pickles.

Simple Lemon Garlic Vinaigrette

With only 4 healthy ingredients, this recipe watches your time, and your waistline. It pairs beautifully with seafood.

Simple Lemon Garlic Vinaigrette

The juice of 1/2 a lemon or 1/4 cup

1/2 tsp sea salt (or to taste)

1 fat or 2 medium garlic cloves crushed & minced

1/2 cup of good Olive oil or double the amount of juice

Whisk until salt dissolves. 

Drizzle or Toss with arugula or spinach with cracked pepper. It would also work as a marinade.

Coconut Tres Leches with a Sola Stella Olive Oil Butter Cake

This cake was created for an Italian dinner we catered at the Texas Hill Country Olive Oil Company. The cake alone is  warm, thick, and perfect with a cup of coffee. However, it is amazing dressed up with Coconut Tres Leches Icing.


Sola Stella Olive Oil Butter Cake

Ingredients

3 cups unbleached all-purpose flour

2 cups  sugar

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup buttermilk

1/2 cup butter

1/2 cup Sola Stella olive oil or light Olive oil 

2 teaspoons vanilla extract & 2 tsp butter extract

4 eggs

Mix together dry ingredients and wet ingredients separately and then combine. Pour into a 13×9 pan or bundt cake pan and cook at 350 for 20-30 minutes until golden and puffed.

Cake Topping: use this if serving alone.

3/4 cup sugar

1/3 cup of butter

1/8 cup of butter rum

3 tablespoons water

2 teaspoons vanilla extract

Heat until sugar dissolves then add vanilla. Pour over cooked cake.

Coconut Tres Leches:

Poke holes into cooked cake. Pour one can of cream of coconut and one can of sweet & condensed milk over cake.

Icing:

Whip 2 cups of whipping cream in a cold bowl with a mixer. When peaks start to form add 1 tbsp of sugar and 1 tsp of vanilla until stiff peaks form. Spread over chilled cake. Top with sweetened shredded coconut.

Garnish with strawberries and slivered almonds.

Red Velvet Brownies with Buttercream Fluff and Blackberry Balsamic Syrup Drizzle

Red Velvet Brownies

1/2 cup melted butter

1 box of red velvet cake mix

1/3 cup evaporated milk

Mix all ingredients together and press into an 8×8  buttered pan. Bake at 350 for 15 minutes. Allow to cool. 

Buttercream Fluff

3 Tablespoons All-purpose Flour

3/4 cup whole Milk

1 teaspoon Vanilla

3/4 cup Butter

3/4 cup Granulated Sugar

In a glass pitcher, heat milk for 30 seconds and then whisk in flour in 30 sec increments while whisking in between until thick. Let cool to room temperature. Stir in vanilla.

Cream the butter and sugar together until light and fluffy. You don’t want any sugar graininess left. Then add the completely cooled milk/flour/vanilla mixture and beat the living daylights out of it. Beat it until it all combines and resembles whipped cream. Once brownies are cool, spread on thick and smooth. 

Blackberry Balsamic Syrup

1 cup of blackberry balsamic 

1/4 cup sugar

Microwave for 45 seconds. Stir. Microwave in 30 seconds until sugar is dissolved. Allow to cool.

Drizzle syrup over the brownies and garnish with mint & raspberries.
