New Year Sparkler

Are you looking for a healthy sparkle to kick in the New Year? This has color, fizz, glamour, and happens to be low in calories. Refreshing without alcohol, it can easily turn into a cocktail with a shot of vodka, or prosecco. Check it out.


New Year Sparkler

Ingredients

1 clementine or small orange

1/4-1/2 tsp of liquid stevia or vanilla stevia (depending on desired sweetness)

3-4 fresh cranberries

2-3 mint leaves

1-2 slices of fresh lime

1 can of sparkling water

***for cocktail, add 1 shot of vodka or prosecco 

Directions:

Muddle 1 leaf mint and 1 cranberry in a glass. Squeeze the juice of the small orange. Drop orange slices into a glass. Squeeze one slice of lime juice in and drop lime in. Add remaining cranberries and mint leaves. If adding alchocol, add it first and stir. Add ice and sparkle water to fill glass. Stir and serve.

Sweet Baby Green Juice

Do you find yourself struggling to eat your daily allotted veggies? These super greens are easy to make and way cheaper than buying by the bottle at the store. I make a new batch about every 3-4 days. It’s fresh and sweetened with a fresh peach, pear, and pineapple juice. 


Sweet Baby Green Juice

2 stalks of celery

3-4 Tbsp Lemon juice

1 cup of 100% Pineapple Juice

1 whole green pear or 1 apple (remove core, but keep the skin)

2 cups of baby spinach

1 tsp fresh ginger

1 fresh peach with skin on/pit removed

1 cucumber (skin on)

1 cup of filtered water

Directions

First of all, wash all of the produce very well. Place all of the ingredients into a blender and blend baby blend until you get it as smooth as possible. Pour through a sieve into a sealable glass jar to remove any chunks (chunks not cool in my juice). You can disperse into premeasured sanitized mason jars or a large sealable glass bottle. 

Keep refrigerated up to 10 days. It’s filled with fiber, so it also is vey filling. Add Chia for some extra protein or a hearty splash of almond milk to drink for a meal.

Pineapple Whip Jalapeño-Ginger Margeritas 

It’s definitely 5 o’clock somewhere when this tropical treat is delivered frozen and salted. With the perfect amount of sweet and heat. Ginger and Jalape├▒o provide a nice base to the pineapple and mint. The layers of flavors go on for days! It’s a grown up version of our childhood Pineapple Whip. Freeze a batch the night before and turn them into Margerita snow cones!

Pineapple Whip Jalape├▒o-Ginger Margeritas

1/2-1 tsp of fresh ginger

2-3 Mint leaves 

1 shot glass of 100% Pineapple juice

1 shot glass full of fresh lime juice

1/2 shot glass of fresh lemon juice

1 cup of fresh diced pineapple 

2 thin slices of jalape├▒o with seeds removed 

2 shots of Tequila

2 shots of Triple Sec 

1-2 tbsp of agave syrup (depending on desired sweetness) 

1 1/2 cups of ice

Directions

Place all of the ingredients into a blender. Blend until smooth. Garnish with fresh pineapple.

Serves 3-4 large glasses or 5-6 small.


To make snow cones. Freeze overnight and scoop into a frosty glass with a spoon.

Frozen Texas Peach Margeritas 

Made from fresh juice, Texas peaches, and agave, this is the perfect Adult beverage to beat the heat by the pool. 


Frozen Texas Peach Margeritas

2 large peaches or 3 small (wash & remove core, but leave skin on)

Use a shot glass to measure the following: 

1 full shot of fresh lime juice

1/2 shot of fresh lemon juice 

1/2 shot of orange juice or pineapple 

2 shots of Triple sec

2 shots of Tequila

1/2 a shot of agave (or more if you like sweeter)

1 1/2-2 cups of ice

Place everything in a blender and pur├ęe until combined or it becomes the consistency of a smooth frozen margerita. For a virgin version, skip the alcohol and replace with pineapple or orange juice.

Makes 3 large margeritas or 4-5 small.

Lemon-Lime Detox Bubbly

As the weather warms, and the sun shines, my craving for a bubbly drink surfaces. For a twisted bonus, this cures the craving and gives my body some much needed detox and increases the effectiveness of my digestion. So step into the light with the bubbly in hand and don’t be tempted to throw in a shot of vodka­čśČ­čśë 

Lemon-Lime Detox Bubbly

 1/2 tsp of freshly grated ginger

2 tsp of lime juice

2-3 drops of lemon oil or the juice of 1 lemon

1/2-1 tsp of liquid stevia (depending on preferred sweetness)

1 tsp apple cider vinegar (optional)

1 bottle of TopoChico lime twist or plain sparkle water 

Optional add-in: a pinch of Turmeric and black pepper for anti-inflammatory 

Directions

Mix the fresh juice, oil, stevia,and grated ginger at the bottom of a large glass. Add in ice. Pour in TopoChico and stir.

Hot Cocoa Pops

I caught a glimpse of a version of this on Pinterest and I fell in love with the idea. Upon viewing the recipe, it lacked a little depth in flavor. So I created my own. With a pinch of sea salt, cream, butter, and vanilla, these are are decadent. Not to mention that these Hot Cocoa Pops are adorable. 

  
Hot Cocoa Pops

2 cups of semi-sweet chocolate chips

2 tbsp of salted butter or ghee

2 tbsp whipping cream 

2 tbsp powder sugar

1 tsp vanilla

Pinch of sea salt

Wooden or plastic spoons (8-9)

Decorations: sprinkles, crushed candy canes, or marshmallows

Directions:

Choose your molds either silicone muffin cups, or mini plastic cups. Rub down with coconut oil or butter. Add in 1 tsp of decorations to each mold or cup.

  

Add all of the ingredients except powder sugar and vanilla. Microwave 45 seconds. Mix together until melted. 

  

Add powder sugar and vanilla. Stir until smooth. Using a Tbsp. Measure a heaping Tbsp to each mold (about 1 1/4 Tbsp). Butter hands and smooth top. Add more decorations. Push the spoon into the top of each chocolate.


  
Chill until firm. I popped mine in the freezer for 30 minutes. Wrap in clear bags with a ribbon and instructions.

   

   
Instructions:

Place chocolate in a mug and remove spoon. Add 8-10 oz of milk. Microwave for 45-55 seconds. Add the spoon back in and stir until creamy and smooth.

Pumpkin Spice Syrup

I am a huge coffee snob. I love quality, strong, hot, coffee in the morning with lots of foam on top. A shot of spice, or holiday flavor is always special. However, the crazy preservatives, sugar, and chemicals in the store bought flavored creamers and syrups are enough to make me ill. My hubby is super picky when it comes to pumpkin spice syrup, and this gained his approval. As a bonus, this syrup is chocked full of vitamins, and it is naturally sweetened by Maple Syrup. Just add it into black coffee, or top it off with your favorite milk. 

  
Pumpkin Spice Syrup

8 tbsp of pure maple syrup

1 tsp of molasses

4-5 tbsp organic pumpkin pur├ęe 

1 tsp of pumpkin pie spice 

2 tsp vanilla extract 

2 tbsp grassfed butter or ghee (for dairy free, use coconut cream)

4 tbsp organic coconut oil 

Directions:

Add everything except the vanilla into a large glass jar or small sauce pan.  Either microwave for 1 minute until heated through, or cook on the stove top until it comes to a low boil. Add in vanilla. Pour into a bullet,blender, or processor. Process for 1 minute. Return to the glass jar. Store in the refrigerator if you will not use it in the next 3 days. 

   

 To serve: add 1-2 Tbsp (depending on the size of the cup or how sweet you prefer your coffee) to coffee cup. Add coffee and whisk thoroughly or blend briefly in a bullet. Then add in cream/milk and top with cinnamon. It’s best blended.

Eli’s Chocolate Rock Soda & Cream

This is my favorite of Eli’s soda creations! Mainly, because I love the combo of chocolate and cream.   

   
Eli’s Chocolate Rock Soda & Cream

1 cup of sugar

1 cup of water

1 tsp vanilla

5 Tbsp of cocoa powder

Whipping Cream

Sparkling Mineral Water

Directions:

Microwave water and sugar mixture in a large glass jar for 2 minutes stirring between each minute. 

  

Then stir in vanilla and cocoa powder. Whisk until smooth and microwave 30 more seconds. 

  

To serve, add 1/4 cup of syrup to a large glass filled with ice. Add 1 cup of sparkling mineral water and 2-3 Tbsp of whipping cream. Stir until combined.

Eli’s Raspberry Soda

Eli is still creating new sodas. His latest  is called “Heat Red” and is based off his super hero cartoon creation:  Ice God vs The Heat. This is simple to make in the microwave, and it is bursting with fresh raspberries.

1 cup of water

1 cup of raw sugar

1 cup of fresh raspberries

Sparking mineral water

Directions

Pour sugar and water in a large glass jar. Microwave for 1 minute and 20 seconds. Stir and add 1 cup of fresh raspberries. Microwave for another 1 minute and 20 seconds. Stir and mash raspberries. Cook 30 more seconds. Pour through a sieve into another glass jar to remove raspberry chunks and seeds.   

To assemble drink:

Fill a glass cup with lots of ice. Add 1/4 cup of raspberry syrup with 1 cup of sparkling mineral water.

Blueberry Vanilla Mint Soda

My Eli’s favorite experiments are in the form of homemade soda. He loves to dream of new flavors with crazy names. His name for this soda is “Ice Breath.” The blueberries give this soda a bluish-purple hue with a sweet hint of mint. The vanilla pulls the two flavors together with a sweet finish. If you have 10 minutes, then it’s time to open your homemade soda shop.

Blueberry Vanilla Mint Soda

1 cup sugar 

1 cup of water

1/2 cup of blueberries

4 mint leaves

2 tsp of Vanilla extract

Sparkling Mineral water 

Directions:

Pour sugar and water into a small saucepan. Bring it to a boil on high heat until sugar is dissolved. Then, add in blueberries and mint and turn heat to Medium. Cook for another 2-3 minutes. Turn the heat off and add in vanilla. Pour mixture through a strainer.  

Pour liqued mixture into a glass jar. Add 1/4 cup of the mixture into a large glass filled with ice. Pour sparkling mineral water to the top. Stir and enjoy! The syrup should make about 6 drinks.
