Kim’s Cookin’ School Fresh Asparagus

It’ finally spring, and the asparagus will be growing like weeds!
Here is a simple recipe to enjoy while asparagus is at its best.

1 bunch of fresh asparagus
Extra virgin olive oil
Salt and pepper
Your favorite grated cheese, (I used Parmesan, Gyre is equally my fave).
Lemon garlic vinaigrette (posted on the main blog page)

Trim ends up to the tender part of the stalk.
Rinse brief, then pat dry.
Preheat broiler.

Drizzle asparagus with extra virgin olive oil and season with salt and pepper to taste. Roll around to coat evenly. Spread in a even layer in broiler pan, place under broiler and cook about 3- 5 minutes or until just tender. Careful not to over cook and getting too soft.

Remove from broiler and sprinkle over cheese.  Return to broiler and melt cheese.
When done, drizzle over lemon garlic vinegar, Herbs de Provence, and adjust salt and pepper.  May be served warm or room temperature.
