Simple Lemon Garlic Vinaigrette

The juice of 1/2 a lemon or 1/4 cup
1/2 tsp sea salt (or to taste)
1 fat or 2 medium garlic cloves crushed & minced
1/2 cup of good Olive oil or double the amount of juice
Whisk until salt dissolves.
Drizzle or Toss with arugula or spinach with cracked pepper. It would also work as a marinade.

Red Velvet Brownies with Buttercream Fluff and Blackberry Balsamic Syrup Drizzle

Red Velvet Brownies
1/2 cup melted butter
1 box of red velvet cake mix
1/3 cup evaporated milk
Mix all ingredients together and press into an 8×8 buttered pan. Bake at 350 for 15 minutes. Allow to cool.
3 Tablespoons All-purpose Flour
3/4 cup whole Milk
1 teaspoon Vanilla
3/4 cup Butter
3/4 cup Granulated Sugar
In a glass pitcher, heat milk for 30 seconds and then whisk in flour in 30 sec increments while whisking in between until thick. Let cool to room temperature. Stir in vanilla.
Cream the butter and sugar together until light and fluffy. You don’t want any sugar graininess left. Then add the completely cooled milk/flour/vanilla mixture and beat the living daylights out of it. Beat it until it all combines and resembles whipped cream. Once brownies are cool, spread on thick and smooth.
Blackberry Balsamic Syrup
1 cup of blackberry balsamic
1/4 cup sugar
Microwave for 45 seconds. Stir. Microwave in 30 seconds until sugar is dissolved. Allow to cool.
Drizzle syrup over the brownies and garnish with mint & raspberries.

Italian Sausage Meat Sauce

6-8 cloves garlic. Smashed, than chopped
1/4 cup mince onion
1/4 cup mince red pepper
1/4 teaspoon fennel seeds
Salt and pepper
Pinch or to taste Red pepper flakes
2 lbs Italian sausage, casing removed if linked.
1 Tablespoon tomato paste
28 oz can crushed tomato, 14 oz can tomato sauce (I use Cento brand )
-A few pinches of Basil, Oregano, Italian seasoning to taste and 1 pinch of sugar.
Sauté onion and red peppers in olive oil until clear over med heat, add salt, pepper, red pepper flakes, fennel seeds and garlic, cook until garlic is fragrant, careful not to burn the garlic. Add crumbled sausage and cook stirring and breaking meat up until cooked through. Increase heat and add tomato paste and stir allow paste to darken a little color.
Add crushed tomatoes and tomato sauce, stir, bring to boil than reduce heat to a low simmer.
Adjust seasonings, and add what you like, basil, oregano, Italian seasoning etc.
